  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) diced tomatoes, undrained
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (8 ounces) tomato sauce
  • 1 cup frozen corn
  • 1 cup uncooked elbow macaroni
  • 2 cups shredded cheddar cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
  3. Add the ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes, and drain excess fat.
  4. Stir in the diced tomatoes, kidney beans, tomato sauce, frozen corn, oregano, chili powder, salt, and pepper. Mix well and let simmer for 10 minutes.
  5. While the meat mixture simmers, bring a large pot of salted water to a boil. Add the uncooked elbow macaroni and cook according to package instructions until al dente, about 7-8 minutes. Stir occasionally.
  6. Drain the macaroni and set aside without rinsing.
  7. After the meat mixture has simmered, remove from heat and gently fold in the cooked macaroni.
  8. Preheat your oven to 350°F (175°C).
  9. In a greased 9×13 inch baking dish, spread half of the meat and macaroni mixture.
  10. Sprinkle 1 cup of shredded cheddar cheese over the first layer.
  11. Top with the remaining meat and macaroni mixture, then sprinkle the remaining cup of cheese on top.
  12. Cover the baking dish with aluminum foil, ensuring it doesn’t touch the cheese.
  13. Bake in the preheated oven for 25 minutes.
  14. Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.
  15. Let sit for 10 minutes before serving.
