This hearty Amish Country Casserole features a delicious blend of ground beef, pasta, and vegetables, all topped with melted cheddar cheese. It’s a comforting one-dish meal that’s perfect for family gatherings or potlucks, offering a satisfying combination of flavors and textures.

- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) diced tomatoes, undrained
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (8 ounces) tomato sauce
- 1 cup frozen corn
- 1 cup uncooked elbow macaroni
- 2 cups shredded cheddar cheese
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
- Add the ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes, and drain excess fat.
- Stir in the diced tomatoes, kidney beans, tomato sauce, frozen corn, oregano, chili powder, salt, and pepper. Mix well and let simmer for 10 minutes.
- While the meat mixture simmers, bring a large pot of salted water to a boil. Add the uncooked elbow macaroni and cook according to package instructions until al dente, about 7-8 minutes. Stir occasionally.
- Drain the macaroni and set aside without rinsing.
- After the meat mixture has simmered, remove from heat and gently fold in the cooked macaroni.
- Preheat your oven to 350°F (175°C).
- In a greased 9×13 inch baking dish, spread half of the meat and macaroni mixture.
- Sprinkle 1 cup of shredded cheddar cheese over the first layer.
- Top with the remaining meat and macaroni mixture, then sprinkle the remaining cup of cheese on top.
- Cover the baking dish with aluminum foil, ensuring it doesnt touch the cheese.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 15-20 minutes, until the cheese is bubbly and golden brown.
- Let sit for 10 minutes before serving.
