Ingredients
Scale
- 4 chicken thighs (bone-in, skin-on)
- 1 cup apricot preserves
- 1/2 cup soy sauce
- 1/4 cup Dijon mustard
- 1 tablespoon minced garlic (about 3 cloves)
- 1 tablespoon minced fresh ginger (or 1 teaspoon ground ginger)
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional for heat)
- 1 tablespoon sesame seeds (for garnish)
- 2 green onions, sliced (for garnish)
Instructions
- In a medium-sized mixing bowl, combine the apricot preserves, soy sauce, Dijon mustard, minced garlic, and minced ginger. Whisk until smooth and slightly thick.
- Taste the marinade and adjust seasoning if necessary, adding salt or red pepper flakes for heat if desired.
- Set aside about 1/2 cup of the marinade in a separate bowl for basting and serving later.
- Pat the chicken thighs dry with paper towels to help the skin crisp up.
- Season the chicken thighs with salt and black pepper on both sides.
- Place the chicken in a resealable plastic bag or shallow dish, pour the marinade over, ensuring each piece is coated. Seal or cover.
- Refrigerate for at least 1 hour, preferably 4 to 6 hours or overnight for best flavor.
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat. Add the marinated chicken thighs, skin-side down, and sear for 5-7 minutes until golden brown.
- Flip the chicken and pour the reserved marinade over the top.
- Transfer the skillet to the oven and bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C). Use a meat thermometer for accuracy.
- For extra crispy skin, broil for an additional 2-3 minutes, watching closely to prevent burning.
- Remove the chicken from the oven and let it rest for 5 minutes to allow juices to redistribute.
- Prepare your serving platter, ideally with steamed rice or quinoa to complement the dish.
- Place the chicken on the platter and drizzle with remaining marinade.
- Garnish with sesame seeds and sliced green onions for added flavor and presentation.
- Serve the apricot chicken hot with sides like steamed broccoli, roasted vegetables, or a green salad.
- If you have leftover marinade, boil it for a few minutes and serve as a dipping sauce.
- Enjoy your delicious apricot chicken with family and friends!
