  • Total Time: 10 minutes
  • Yield: 2 slices 1x

Description

Quick & easy avocado toast! Creamy avocado, salty feta, sweet cranberries, and crunchy walnuts create a delicious, customizable breakfast, lunch, or snack.

Ingredients

Scale
  • 2 slices of your favorite bread (sourdough or whole wheat recommended)
  • 1 ripe avocado
  • 2 ounces feta cheese, crumbled
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts, roughly chopped
  • 1 tablespoon olive oil (extra virgin)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Avocado: Cut the avocado lengthwise, remove the pit, and scoop the flesh into a bowl. Mash with a fork to your desired consistency (smooth or chunky). Season with salt, pepper, and a squeeze of lemon juice (optional).
  2. Toast the Bread: Toast bread in a toaster, toaster oven, or skillet with olive oil until golden brown and crispy.
  3. Assemble the Toast: Spread mashed avocado evenly over the toasted bread.
  4. Add Toppings: Crumble feta cheese over the avocado, then sprinkle with dried cranberries and chopped walnuts.
  5. Finishing Touches: Sprinkle with red pepper flakes (optional) and drizzle with olive oil.
  6. Optional Toppings: Add everything bagel seasoning, honey, eggs, sprouts, or hot sauce.

Notes

  • Use ripe avocados that yield to gentle pressure.
  • Don’t over-mash the avocado unless you prefer a smooth spread.
  • Toast the bread to your desired level of doneness.
  • Season generously with salt, pepper, and other spices.
  • Get creative with toppings and experiment with different combinations.
  • To prevent browning, add a squeeze of lemon juice and cover the avocado tightly with plastic wrap, pressing the plastic wrap directly onto the surface of the avocado.
  • Vegan: Omit the feta cheese or substitute with a vegan feta alternative.
  • Gluten-Free: Use gluten-free bread.
  • Dairy-Free: Omit the feta cheese.
  • Nut-Free: Omit the walnuts and consider using sunflower seeds or pumpkin seeds for added crunch.
