- 2 slices of your favorite bread (sourdough or whole wheat recommended)
- 1 ripe avocado
- 2 ounces feta cheese, crumbled
- 1/4 cup dried cranberries
- 1/4 cup walnuts, roughly chopped
- 1 tablespoon olive oil (extra virgin)
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Prepare the Avocado: Cut the avocado lengthwise, remove the pit, and scoop the flesh into a bowl. Mash with a fork to your desired consistency (smooth or chunky). Season with salt, pepper, and a squeeze of lemon juice (optional).
- Toast the Bread: Toast bread in a toaster, toaster oven, or skillet with olive oil until golden brown and crispy.
- Assemble the Toast: Spread mashed avocado evenly over the toasted bread.
- Add Toppings: Crumble feta cheese over the avocado, then sprinkle with dried cranberries and chopped walnuts.
- Finishing Touches: Sprinkle with red pepper flakes (optional) and drizzle with olive oil.
- Optional Toppings: Add everything bagel seasoning, honey, eggs, sprouts, or hot sauce.
