- 1 bell pepper, chopped (red or green for color)
- 1 onion, chopped
- 1 cup sugar
- 1/2 cup apple cider vinegar
- 1/2 cup ketchup
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ginger powder
- Salt and pepper to taste

Instructions
- Preheat your oven to 400°F (200°C).
- Season chicken pieces with salt and pepper in a large bowl.
- In three shallow bowls, place cornstarch, beaten eggs, and breadcrumbs.
- Coat each chicken piece in cornstarch, dip in eggs, and roll in breadcrumbs.
- Line a baking sheet with parchment paper and place chicken pieces on it. Drizzle with vegetable oil.
- Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
- Ensure chicken reaches an internal temperature of 165°F (75°C).
- In a medium saucepan, mix sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and ginger powder.
- Bring to a gentle boil over medium heat, then reduce to low and simmer for 5-7 minutes.
- For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and add to the sauce while stirring.
- In a skillet, heat oil and sauté bell pepper and onion for 5-7 minutes until tender.
- Stir in pineapple chunks and cook for another 2-3 minutes.
- In a large bowl, toss baked chicken with sweet and sour sauce.
- Mix in sautéed vegetables and pineapple until well combined.
- Garnish with green onions and sesame seeds, and serve hot over rice or noodles.
