  • 1 cup cornstarch
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (preferably panko for extra crunch)
  • 1 tablespoon vegetable oil
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1 bell pepper, chopped (red or green for color)
  • 1 onion, chopped
  • 1 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/2 cup ketchup
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Season chicken pieces with salt and pepper in a large bowl.
  3. In three shallow bowls, place cornstarch, beaten eggs, and breadcrumbs.
  4. Coat each chicken piece in cornstarch, dip in eggs, and roll in breadcrumbs.
  5. Line a baking sheet with parchment paper and place chicken pieces on it. Drizzle with vegetable oil.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through.
  7. Ensure chicken reaches an internal temperature of 165°F (75°C).
  8. In a medium saucepan, mix sugar, apple cider vinegar, ketchup, soy sauce, garlic powder, and ginger powder.
  9. Bring to a gentle boil over medium heat, then reduce to low and simmer for 5-7 minutes.
  10. For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and add to the sauce while stirring.
  11. In a skillet, heat oil and sauté bell pepper and onion for 5-7 minutes until tender.
  12. Stir in pineapple chunks and cook for another 2-3 minutes.
  13. In a large bowl, toss baked chicken with sweet and sour sauce.
  14. Mix in sautéed vegetables and pineapple until well combined.
  15. Garnish with green onions and sesame seeds, and serve hot over rice or noodles.
