  • 1 packet taco seasoning (or homemade seasoning)
  • 1 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 large head of romaine lettuce, chopped
  • 2 medium tomatoes, diced
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1 cup salsa
  • 1 cup sour cream
  • 1 bag tortilla chips (optional)
  • Fresh cilantro, for garnish (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional 1 minute, stirring frequently.
  3. Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes.
  4. Drain any excess fat from the skillet.
  5. Sprinkle the taco seasoning over the beef, pour in the water, and stir well. Bring to a simmer and cook for about 5 minutes until the sauce thickens slightly.
  6. In a large mixing bowl, add the chopped romaine lettuce.
  7. Add the diced tomatoes for sweetness.
  8. Toss in the black beans and corn for flavor and nutrition.
  9. Add the diced avocado for creaminess.
  10. In a large serving bowl or platter, layer the salad base: spread the lettuce, tomatoes, black beans, corn, and avocado evenly.
  11. Spoon the seasoned ground beef mixture over the salad.
  12. Sprinkle shredded cheddar cheese over the beef.
  13. If using tortilla chips, crush and sprinkle them on top or serve on the side.
  14. Drizzle salsa over the salad to taste.
  15. Add dollops of sour cream for creaminess.
  16. Garnish with fresh cilantro for a burst of freshness.
