- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh, frozen, or canned)
- 1 large head of romaine lettuce, chopped
- 2 medium tomatoes, diced
- 1 cup shredded cheddar cheese
- 1 avocado, diced
- 1 cup salsa
- 1 cup sour cream
- 1 bag tortilla chips (optional)
- Fresh cilantro, for garnish (optional)
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1 minute, stirring frequently.
- Add the ground beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes.
- Drain any excess fat from the skillet.
- Sprinkle the taco seasoning over the beef, pour in the water, and stir well. Bring to a simmer and cook for about 5 minutes until the sauce thickens slightly.
- In a large mixing bowl, add the chopped romaine lettuce.
- Add the diced tomatoes for sweetness.
- Toss in the black beans and corn for flavor and nutrition.
- Add the diced avocado for creaminess.
- In a large serving bowl or platter, layer the salad base: spread the lettuce, tomatoes, black beans, corn, and avocado evenly.
- Spoon the seasoned ground beef mixture over the salad.
- Sprinkle shredded cheddar cheese over the beef.
- If using tortilla chips, crush and sprinkle them on top or serve on the side.
- Drizzle salsa over the salad to taste.
- Add dollops of sour cream for creaminess.
