- In a large mixing bowl, combine the flour, granulated sugar, baking powder, salt, ground cinnamon, and nutmeg (if using). Whisk until well blended.
- In a separate bowl, whisk together the milk, eggs, and melted butter. Ensure the butter is not too hot to avoid cooking the eggs.
- Pour the wet ingredients into the dry ingredients. Gently mix with a spatula or wooden spoon until just combined. A few lumps are fine; avoid overmixing.
- Cover the bowl with plastic wrap or a clean kitchen towel and let it rest for about 30 minutes.
- Lightly flour your work surface. Turn the dough out onto the floured surface and sprinkle a little flour on top.
- Roll the dough out to about 1/4 inch thick, keeping it as rectangular as possible.
- Cut the dough into squares or rectangles, about 2-3 inches in size, using a sharp knife or pizza cutter.
- Gather any scraps, knead them gently, and roll out again to cut more beignets.
- In a deep pot or heavy-bottomed skillet, pour enough vegetable oil to reach a depth of about 2 inches. Heat the oil over medium heat to 350°F (175°C).
- Carefully drop a few pieces of dough into the hot oil, avoiding overcrowding. Fry for about 2-3 minutes on one side until golden brown, then flip and cook for another 1-2 minutes.
- Use a slotted spoon to remove the beignets and transfer them to a plate lined with paper towels to drain excess oil.
- Repeat with the remaining dough squares, monitoring the oil temperature.
- Once fried, dust the beignets generously with powdered sugar.
