  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sugar
  • 1/4 cup chicken broth
  • 2 green onions, chopped (for garnish)
  • Cooked rice (for serving)

Instructions

  1. In a medium bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well to coat the chicken. Let it marinate for at least 15 minutes.
  2. Slice the onion and bell pepper into thin strips. Mince the garlic and ginger, and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat the pan. Add the marinated chicken in a single layer and sear for 3-4 minutes without stirring. Stir occasionally until cooked through, about 5-7 minutes. Remove from skillet and set aside.
  4. In the same skillet, add sliced onion and bell pepper. Stir-fry for 2-3 minutes until they start to soften.
  5. Add minced garlic and ginger to the skillet. Stir and cook for an additional 1-2 minutes until fragrant.
  6. In a small bowl, whisk together black pepper, oyster sauce, rice vinegar, sugar, and chicken broth. Pour the sauce over the sautéed vegetables and let it simmer for about 2 minutes.
  7. Return the cooked chicken to the skillet. Toss to coat the chicken with the sauce and mix with the vegetables. Cook for an additional 2-3 minutes.
  8. Taste the dish and adjust seasoning if necessary. Add more black pepper or red pepper flakes for extra heat if desired.
  9. Remove from heat and transfer the black pepper chicken to a serving platter. Garnish with chopped green onions. Serve hot over cooked rice.
