- 1 medium onion, sliced

- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon black pepper (adjust to taste)
- 2 tablespoons oyster sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 1/4 cup chicken broth
- 2 green onions, chopped (for garnish)
- Cooked rice (for serving)
Instructions
- In a medium bowl, combine the chicken pieces with soy sauce and cornstarch. Mix well to coat the chicken. Let it marinate for at least 15 minutes.
- Slice the onion and bell pepper into thin strips. Mince the garlic and ginger, and set aside.
- Heat a large skillet or wok over medium-high heat. Add vegetable oil and swirl to coat the pan. Add the marinated chicken in a single layer and sear for 3-4 minutes without stirring. Stir occasionally until cooked through, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add sliced onion and bell pepper. Stir-fry for 2-3 minutes until they start to soften.
- Add minced garlic and ginger to the skillet. Stir and cook for an additional 1-2 minutes until fragrant.
- In a small bowl, whisk together black pepper, oyster sauce, rice vinegar, sugar, and chicken broth. Pour the sauce over the sautéed vegetables and let it simmer for about 2 minutes.
- Return the cooked chicken to the skillet. Toss to coat the chicken with the sauce and mix with the vegetables. Cook for an additional 2-3 minutes.
- Taste the dish and adjust seasoning if necessary. Add more black pepper or red pepper flakes for extra heat if desired.
- Remove from heat and transfer the black pepper chicken to a serving platter. Garnish with chopped green onions. Serve hot over cooked rice.
