  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup grated Parmesan cheese
  • Juice of 1 lemon

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a medium bowl, mix Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
  3. Add shrimp to the bowl, drizzle with 1 tablespoon olive oil, and toss to coat. Let marinate for 15-20 minutes.
  4. Boil a large pot of salted water. Cook linguine according to package instructions until al dente (8-10 minutes).
  5. Reserve 1 cup of pasta water, drain the rest, and toss the pasta with a little olive oil.
  6. In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add seasoned shrimp in a single layer and cook for 2-3 minutes on one side until pink. Flip and cook for another 1-2 minutes until opaque. Remove shrimp and set aside.
  7. In the same skillet, reduce heat to medium and sauté minced garlic for 30 seconds until fragrant.
  8. Pour in chicken broth, scraping up browned bits, and let simmer for 2-3 minutes.
  9. Add heavy cream, stirring to combine, and simmer for another 2-3 minutes until slightly thickened. Adjust with reserved pasta water if too thick.
  10. Stir in halved cherry tomatoes and cook for an additional 2 minutes until softened.
  11. Add cooked linguine to the skillet, tossing to coat in the sauce. Adjust creaminess with reserved pasta water if needed.
  12. Return blackened shrimp to the skillet and toss everything together. Squeeze fresh lemon juice over the dish.
  13. Sprinkle with chopped parsley and grated Parmesan cheese, mixing until evenly distributed.
  14. Serve immediately, garnished with extra parsley and Parmesan if desired. Enjoy!
