This Cheesy Ground Beef Dip is a delicious and hearty appetizer featuring savory ground beef, creamy cheeses, and zesty tomatoes with green chilies. Ideal for parties or game day, its best served warm with tortilla chips or fresh veggies for dipping.

- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8 oz) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 tablespoon olive oil
- Fresh cilantro, chopped (for garnish)
- Tortilla chips or sliced vegetables (for serving)
Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the diced onion and sauté for about 3-4 minutes until translucent.
- Add the minced garlic and cook for an additional 1-2 minutes, stirring frequently.
- Add the ground beef, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat.
- Stir in the diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Mix well and let simmer for about 5 minutes.
- In a medium bowl, add the softened cream cheese and beat until smooth.
- Gradually mix in the shredded cheddar and Monterey Jack cheeses until well combined.
- Remove the beef mixture from heat and let cool for a couple of minutes.
- Fold the beef mixture into the cheese mixture until evenly combined.
- Preheat the oven to 350°F (175°C). Transfer the dip mixture into a baking dish (9×9 inch recommended).
- Spread evenly and smooth the top. Optionally, sprinkle more cheese on top.
- Bake for 20-25 minutes, or until bubbly and slightly golden brown.
- Remove from the oven and let cool for a few minutes.
- Garnish with chopped cilantro and serve warm with tortilla chips or sliced vegetables.
- Allow leftovers to cool completely before transferring to an airtight container.
- Store in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes before serving.
