- Vegetable oil for frying

Instructions
- Cut the chicken breasts into bite-sized pieces, aiming for about 1-inch cubes.
- Place the chicken pieces in a large mixing bowl.
- In a separate bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix well.
- Sprinkle the seasoned flour over the chicken and toss gently until all pieces are coated.
- Set up a breading station with three shallow bowls: one for the seasoned flour, one for the eggs, and one for the breadcrumb mixture.
- In the second bowl, whisk the two large eggs until well combined.
- In the third bowl, mix the breadcrumbs, grated Parmesan cheese, dried oregano, dried basil, and cayenne pepper (if using).
- Dip each floured chicken piece into the egg wash, letting excess drip off.
- Transfer the chicken to the breadcrumb mixture, pressing to ensure full coating. Shake off excess breadcrumbs.
- Place the breaded chicken bites on a plate or baking sheet.
- In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch and heat over medium-high heat.
- Once the oil is hot, add the breaded chicken bites in a single layer, avoiding overcrowding.
- Fry for about 3-4 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Use a slotted spoon to transfer cooked chicken bites to a paper towel-lined plate to drain excess oil.
- Arrange the chicken pop bites on a serving platter and serve with your favorite dipping sauces.
