  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash the green beans under cold water, trim the ends, and set aside.
  2. Rinse the baby potatoes and halve them for even cooking.
  3. Chop the bacon into small pieces.
  4. Dice the onion and mince the garlic.
  5. In a large skillet or Dutch oven, heat olive oil over medium heat.
  6. Add the chopped bacon and cook until crispy, about 5-7 minutes.
  7. Remove the bacon with a slotted spoon and place it on a paper towel-lined plate, leaving the drippings in the skillet.
  8. In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
  9. Add the minced garlic and sauté for an additional 1-2 minutes.
  10. Add the halved baby potatoes to the skillet and stir to combine with the onion and garlic.
  11. Pour in the chicken broth and season with salt, black pepper, thyme, and oregano.
  12. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes until fork-tender.
  13. Once the potatoes are tender, stir in the green beans.
  14. Cover and cook for an additional 10-12 minutes until the beans are bright green and tender but still slightly crunchy.
  15. Add the cooked bacon back into the skillet and stir to combine.
  16. Stir in the butter until melted and incorporated.
  17. Taste and adjust seasoning if necessary.
  18. Remove from heat and transfer to a serving dish.
  19. Garnish with freshly chopped parsley before serving.
