- 1 pound fresh green beans, trimmed
- 1 pound baby potatoes, halved
- 4 slices of bacon, chopped
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 cup chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 tablespoon olive oil
- 1 tablespoon butter
- Fresh parsley, chopped (for garnish)
Instructions
- Wash the green beans under cold water, trim the ends, and set aside.
- Rinse the baby potatoes and halve them for even cooking.
- Chop the bacon into small pieces.
- Dice the onion and mince the garlic.
- In a large skillet or Dutch oven, heat olive oil over medium heat.
- Add the chopped bacon and cook until crispy, about 5-7 minutes.
- Remove the bacon with a slotted spoon and place it on a paper towel-lined plate, leaving the drippings in the skillet.
- In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes.
- Add the halved baby potatoes to the skillet and stir to combine with the onion and garlic.
- Pour in the chicken broth and season with salt, black pepper, thyme, and oregano.
- Bring to a gentle boil, then reduce heat to low, cover, and simmer for 15-20 minutes until fork-tender.
- Once the potatoes are tender, stir in the green beans.
- Cover and cook for an additional 10-12 minutes until the beans are bright green and tender but still slightly crunchy.
- Add the cooked bacon back into the skillet and stir to combine.
- Stir in the butter until melted and incorporated.
- Taste and adjust seasoning if necessary.
- Remove from heat and transfer to a serving dish.
- Garnish with freshly chopped parsley before serving.
