  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Juice of 1 lemon

Instructions

  1. Wash the baby potatoes thoroughly under cold running water to remove any dirt. Scrub gently with a vegetable brush.
  2. Cut the cleaned potatoes in half to help them cook faster and absorb flavors.
  3. In a large pot, bring salted water to a boil. Add the halved potatoes and cook for 10-12 minutes until fork-tender but not mushy.
  4. Drain the potatoes in a colander and let them steam for a minute to remove excess moisture.
  5. While the potatoes are cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  6. Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn it.
  7. Add the prawns to the skillet, seasoning with salt, pepper, and paprika. Cook for 2-3 minutes on each side until they turn pink and opaque.
