- 1 pound (450g) baby potatoes, halved
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth

- Salt and pepper, to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- Juice of 1 lemon
Instructions
- Wash the baby potatoes thoroughly under cold running water to remove any dirt. Scrub gently with a vegetable brush.
- Cut the cleaned potatoes in half to help them cook faster and absorb flavors.
- In a large pot, bring salted water to a boil. Add the halved potatoes and cook for 10-12 minutes until fork-tender but not mushy.
- Drain the potatoes in a colander and let them steam for a minute to remove excess moisture.
- While the potatoes are cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
- Add the minced garlic to the hot oil and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Add the prawns to the skillet, seasoning with salt, pepper, and paprika. Cook for 2-3 minutes on each side until they turn pink and opaque.
- Remove the prawns from the skillet and cover with foil to keep warm.
- In the same skillet, reduce the heat to medium and add the remaining 2 tablespoons of olive oil if needed. Pour in the chicken broth and bring to a simmer.
- Add the heavy cream to the skillet, stirring well to combine. Let it simmer for 3-4 minutes to thicken slightly.
- Taste the sauce and adjust seasoning with more salt, pepper, and a pinch of paprika if desired.
- Squeeze in the juice of one lemon to brighten the sauce.
- Add the cooked baby potatoes back into the skillet with the creamy sauce, gently stirring to coat.
- Return the cooked prawns to the skillet, folding them into the mixture to ensure they are well coated.
- Let everything simmer together for an additional 2-3 minutes to meld the flavors.
