  • 1 small onion, finely chopped
  • 1 cup heavy cream
  • 1 cup chicken broth (or vegetable broth for a lighter option)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 1 cup cooked pasta (fettuccine or linguine works great)

Instructions

  1. Rinse the shrimp under cold water and pat them dry with a paper towel.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer and season with salt and pepper.
  3. Cook the shrimp for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of olive oil. Sauté the sliced mushrooms for 5-7 minutes until golden brown and tender.
  5. Add the chopped onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until the onion is translucent.
  6. Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet.
  7. Bring the broth to a gentle simmer and cook for 3-4 minutes to reduce slightly.
  8. Lower the heat and stir in the heavy cream, mixing well.
  9. Add the dried thyme and oregano, allowing the sauce to simmer for another 5 minutes to thicken.
  10. Return the cooked shrimp to the skillet, stirring gently to coat in the sauce. Heat through for 2-3 minutes.
  11. Cook the pasta according to package instructions, salting the water generously.
  12. Reserve about ½ cup of pasta water, then drain the rest.
  13. Add the drained pasta to the skillet with the creamy shrimp and mushroom sauce. Toss together, adding reserved pasta water if needed to loosen the sauce.
  14. Season with additional salt and pepper to taste, and sprinkle with fresh parsley.
  15. Plate the creamy mushroom shrimp pasta in generous portions. Garnish with extra parsley or grated Parmesan cheese if desired.
