- 1 pound large shrimp, peeled and deveined
- 8 ounces fresh mushrooms, sliced (cremini or button mushrooms recommended)
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 small onion, finely chopped
- 1 cup heavy cream
- 1 cup chicken broth (or vegetable broth for a lighter option)
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- 1 cup cooked pasta (fettuccine or linguine works great)
Instructions
- Rinse the shrimp under cold water and pat them dry with a paper towel.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the shrimp in a single layer and season with salt and pepper.
- Cook the shrimp for 2-3 minutes on one side until pink and opaque. Flip and cook for another 1-2 minutes. Remove from skillet and set aside.
- In the same skillet, add the remaining tablespoon of olive oil. Sauté the sliced mushrooms for 5-7 minutes until golden brown and tender.
- Add the chopped onion and minced garlic to the skillet. Sauté for an additional 2-3 minutes until the onion is translucent.
- Pour in the chicken broth, scraping up any brown bits from the bottom of the skillet.
- Bring the broth to a gentle simmer and cook for 3-4 minutes to reduce slightly.
- Lower the heat and stir in the heavy cream, mixing well.
- Add the dried thyme and oregano, allowing the sauce to simmer for another 5 minutes to thicken.
- Return the cooked shrimp to the skillet, stirring gently to coat in the sauce. Heat through for 2-3 minutes.
- Cook the pasta according to package instructions, salting the water generously.
- Reserve about ½ cup of pasta water, then drain the rest.
- Add the drained pasta to the skillet with the creamy shrimp and mushroom sauce. Toss together, adding reserved pasta water if needed to loosen the sauce.
- Season with additional salt and pepper to taste, and sprinkle with fresh parsley.
- Plate the creamy mushroom shrimp pasta in generous portions. Garnish with extra parsley or grated Parmesan cheese if desired.
- Serve warm and enjoy every creamy, flavorful bite!
