Ingredients
Scale
- 1 pound baby potatoes
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, chopped (for garnish)
- Optional: Grated Parmesan cheese (for serving)
Instructions
- Wash the Potatoes: Rinse the baby potatoes under cold water to remove dirt, using a vegetable brush if necessary.
- Boil the Potatoes: In a large pot, cover the cleaned potatoes with water, add a pinch of salt, and bring to a boil. Reduce heat and simmer for 15-20 minutes until fork-tender.
- Drain and Cool: Drain the cooked potatoes in a colander and let them cool for about 10 minutes.
- Preheat the Oven: Preheat your oven to 425°F (220°C).
- Prepare the Seasoning Mix: In a small bowl, mix garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper.
- Cut the Potatoes: Slice each cooled potato in half lengthwise, or into quarters for extra crispiness.
- Coat the Potatoes: In a large bowl, add the halved potatoes, drizzle with olive oil, and sprinkle the seasoning mix. Toss gently to coat evenly.
- Prepare the Baking Sheet: Line a baking sheet with parchment paper or grease it lightly.
- Arrange the Potatoes: Place the seasoned potato halves cut-side down on the baking sheet in a single layer.
- Bake the Potatoes: Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
- Garnish the Potatoes: Let the potatoes cool for a few minutes, then transfer to a serving platter and sprinkle with chopped parsley.
- Optional Cheese Topping: For added flavor, sprinkle grated Parmesan cheese over the hot potatoes just before serving.
- Serve and Enjoy: Serve these crispy potatoes as a side dish, appetizer, or snack with your favorite dipping sauce.
