  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

Quick and easy English muffin breakfast pizzas topped with sausage, veggies, cheese, and a touch of egg for a delicious and customizable morning meal.

Ingredients

Scale
  • 4 English muffins, split and toasted
  • 1/2 cup pizza sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cooked and crumbled breakfast sausage
  • 1/4 cup chopped green bell pepper
  • 1/4 cup sliced black olives
  • 2 large eggs
  • 1 tablespoon milk
  • Salt and pepper to taste
  • Optional toppings: sliced mushrooms, diced onions, pepperoni, cooked bacon

Instructions

  1. Prepare the Toppings: Cook sausage in a skillet over medium heat until browned and cooked through. Drain excess grease and set aside. Chop green bell pepper into small pieces and slice black olives. In a small bowl, whisk together eggs, milk, salt, and pepper.
  2. Assemble the Breakfast Pizzas: Toast English muffins lightly. Spread a thin layer of pizza sauce on each half. Sprinkle generously with mozzarella cheese. Distribute cooked sausage, chopped green bell pepper, and sliced black olives over the cheese. Pour a small amount of the egg mixture over each pizza.
  3. Bake the Breakfast Pizzas: Preheat oven to 375°F (190°C). Place assembled pizzas on a baking sheet. Bake for 12-15 minutes, or until cheese is melted and bubbly and egg is cooked through. Check for doneness by inserting a toothpick into the center; it should come out clean.
  4. Broil (Optional): For extra color, broil for the last minute or two, watching carefully to prevent burning.
  5. Serve: Let cool slightly before serving. Garnish with fresh herbs, hot sauce, or sour cream, if desired.

Notes

  • Cheese Variations: Experiment with cheddar, provolone, or pepper jack cheese.
  • Vegetable Additions: Add spinach, tomatoes, or mushrooms.
  • Meat Substitutions: Use bacon, ham, or pepperoni instead of sausage.
  • Vegetarian Option: Omit meat and add extra vegetables.
  • Spicy Kick: Add red pepper flakes or hot sauce.
  • Gluten-Free: Use gluten-free English muffins.
  • Prepare Ahead: Assemble pizzas ahead of time and store in the refrigerator. Add a few extra minutes to the baking time.
  • Storage: Store leftover pizzas in the refrigerator for up to 3 days. Reheat in the microwave or oven.
