Ingredients

Scale
  • 200g enoki mushrooms, trimmed
  • 300g pork tenderloin, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • 1 tablespoon vegetable oil (for frying)
  • Green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Rinse the enoki mushrooms under cold water to remove any dirt, then trim the ends and set aside to drain.
  2. Slice the pork tenderloin thinly. For easier slicing, freeze the pork for about 30 minutes before cutting.
  3. In a mixing bowl, combine soy sauce, oyster sauce, sesame oil, minced garlic, and minced ginger. This will be the marinade for the pork.
  4. Add the sliced pork to the marinade, ensuring each piece is well-coated. Let it marinate for at least 15 minutes, or up to an hour in the refrigerator.
  5. Lay a slice of marinated pork flat on a clean surface.
  6. Place a small handful (about 10-15) of enoki mushrooms at one end of the pork slice.
  7. Roll the pork around the mushrooms tightly, but not so tight that the mushrooms are squished out.
  8. Secure the roll with a toothpick or a small piece of kitchen twine, inserting one at each end.
  9. Repeat until all pork and mushrooms are used.
  10. Heat a large skillet over medium-high heat and add vegetable oil, allowing it to shimmer.
  11. Place the pork rolls in the skillet, avoiding overcrowding. Cook in batches if necessary.
  12. Cook for 3-4 minutes on one side without moving them to achieve a golden-brown crust.
  13. Flip the rolls using tongs and cook for another 3-4 minutes until fully cooked and no longer pink.
  14. Check the internal temperature with a meat thermometer to ensure it reaches 145°F (63°C).
  15. Remove the rolls from the skillet and place them on a plate lined with paper towels to absorb excess oil.
  16. Let the rolls rest for a couple of minutes, then remove toothpicks or twine.
  17. Slice the rolls into bite-sized pieces for easier serving and to showcase the layers.
  18. Arrange the sliced rolls on a platter, garnishing with chopped green onions and sesame seeds.
  19. Serve with a side of soy sauce or a spicy dipping sauce for an extra kick.
  20. Enjoy these delicious enoki mushroom pork rolls as an appetizer or main dish!
