Ingredients
Scale
- 200g enoki mushrooms, trimmed
- 300g pork tenderloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- Salt and pepper, to taste
- 1 tablespoon vegetable oil (for frying)
- Green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Rinse the enoki mushrooms under cold water to remove any dirt, then trim the ends and set aside to drain.
- Slice the pork tenderloin thinly. For easier slicing, freeze the pork for about 30 minutes before cutting.
- In a mixing bowl, combine soy sauce, oyster sauce, sesame oil, minced garlic, and minced ginger. This will be the marinade for the pork.
- Add the sliced pork to the marinade, ensuring each piece is well-coated. Let it marinate for at least 15 minutes, or up to an hour in the refrigerator.
- Lay a slice of marinated pork flat on a clean surface.
- Place a small handful (about 10-15) of enoki mushrooms at one end of the pork slice.
- Roll the pork around the mushrooms tightly, but not so tight that the mushrooms are squished out.
- Secure the roll with a toothpick or a small piece of kitchen twine, inserting one at each end.
- Repeat until all pork and mushrooms are used.
- Heat a large skillet over medium-high heat and add vegetable oil, allowing it to shimmer.
- Place the pork rolls in the skillet, avoiding overcrowding. Cook in batches if necessary.
- Cook for 3-4 minutes on one side without moving them to achieve a golden-brown crust.
- Flip the rolls using tongs and cook for another 3-4 minutes until fully cooked and no longer pink.
- Check the internal temperature with a meat thermometer to ensure it reaches 145°F (63°C).
- Remove the rolls from the skillet and place them on a plate lined with paper towels to absorb excess oil.
- Let the rolls rest for a couple of minutes, then remove toothpicks or twine.
- Slice the rolls into bite-sized pieces for easier serving and to showcase the layers.
- Arrange the sliced rolls on a platter, garnishing with chopped green onions and sesame seeds.
- Serve with a side of soy sauce or a spicy dipping sauce for an extra kick.
- Enjoy these delicious enoki mushroom pork rolls as an appetizer or main dish!
Notes
- For added flavor, consider incorporating a splash of rice vinegar into the marinade.
- Feel free to experiment with other mushrooms or proteins for different variations.
