  • 1 cup of cream cheese (softened)
  • 2 tablespoons of honey or maple syrup
  • 1 teaspoon of vanilla extract
  • 1 cup of mixed fresh fruits (strawberries, bananas, blueberries, kiwi, etc.)
  • 1 tablespoon of lemon juice
  • 1/4 cup of chopped nuts (optional, for crunch)
  • Mint leaves (for garnish, optional)

Instructions

  1. In a medium-sized mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract.
  2. Using a hand mixer or a whisk, blend the ingredients together until smooth and creamy, ensuring there are no lumps.
  3. Set the mixture aside.
  4. Wash all fresh fruits thoroughly under running water.
  5. Slice the strawberries and bananas into thin rounds. Peel and slice kiwi into rounds as well. Leave blueberries whole.
  6. Toss the sliced fruits with lemon juice in a small bowl to prevent browning and add flavor.
  7. If using nuts, chop them into small pieces.
  8. Lay two slices of bread flat on a clean surface or plate.
  9. Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
  10. Layer the prepared fruits on one slice, starting with strawberries, followed by bananas, and then sprinkle blueberries and kiwi on top.
  11. If using chopped nuts, sprinkle them over the fruits.
  12. Place the second slice of bread on top, cream cheese side down, to create a sandwich.
  13. Gently press down on the sandwich to help it hold together.
  14. Cut the sandwich diagonally or into quarters with a sharp knife.
  15. Optionally, dust the top with powdered sugar or drizzle honey over it.
  16. Garnish with fresh mint leaves.
