- 1 cup of cream cheese (softened)
- 2 tablespoons of honey or maple syrup
- 1 teaspoon of vanilla extract
- 1 cup of mixed fresh fruits (strawberries, bananas, blueberries, kiwi, etc.)
- 1 tablespoon of lemon juice
- 1/4 cup of chopped nuts (optional, for crunch)
- Mint leaves (for garnish, optional)
Instructions
- In a medium-sized mixing bowl, combine the softened cream cheese, honey (or maple syrup), and vanilla extract.
- Using a hand mixer or a whisk, blend the ingredients together until smooth and creamy, ensuring there are no lumps.
- Set the mixture aside.
- Wash all fresh fruits thoroughly under running water.
- Slice the strawberries and bananas into thin rounds. Peel and slice kiwi into rounds as well. Leave blueberries whole.
- Toss the sliced fruits with lemon juice in a small bowl to prevent browning and add flavor.
- If using nuts, chop them into small pieces.
- Lay two slices of bread flat on a clean surface or plate.
- Spread a generous layer of the cream cheese mixture on one side of each slice of bread.
- Layer the prepared fruits on one slice, starting with strawberries, followed by bananas, and then sprinkle blueberries and kiwi on top.
- If using chopped nuts, sprinkle them over the fruits.
- Place the second slice of bread on top, cream cheese side down, to create a sandwich.
- Gently press down on the sandwich to help it hold together.
- Cut the sandwich diagonally or into quarters with a sharp knife.
- Optionally, dust the top with powdered sugar or drizzle honey over it.
- Garnish with fresh mint leaves.
- Serve immediately or wrap tightly in plastic wrap for later.
