  • 2 green onions, chopped
  • 1 lb. boneless, skinless chicken thighs or breasts
  • 1/4 cup soy sauce
  • 1/4 cup mirin (sweet rice wine)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 1 tablespoon vegetable oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Sesame seeds for garnish (optional)

Instructions

  1. In a medium bowl, combine the soy sauce, mirin, brown sugar, rice vinegar, grated ginger, and minced garlic. Whisk until the sugar is dissolved.
  2. Add the chicken to the marinade, ensuring it is well coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
  3. Remove the chicken from the fridge and let it sit at room temperature for 10-15 minutes before cooking.
  4. In a small bowl, mix the cornstarch and water to create a slurry.
  5. Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken, reserving the marinade.
  6. Cook the chicken for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  7. Remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.
  8. In the same skillet, pour in the reserved marinade and bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens (about 2-3 minutes).
