- 8 oz. spaghetti or egg noodles
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon sugar
- 2 green onions, chopped
- 1 lb. boneless, skinless chicken thighs or breasts
- 1/4 cup soy sauce
- 1/4 cup mirin (sweet rice wine)
- 2 tablespoons brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon vegetable oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- Sesame seeds for garnish (optional)
Instructions
- In a medium bowl, combine the soy sauce, mirin, brown sugar, rice vinegar, grated ginger, and minced garlic. Whisk until the sugar is dissolved.
- Add the chicken to the marinade, ensuring it is well coated. Cover with plastic wrap and marinate in the refrigerator for at least 30 minutes (or longer for enhanced flavor).
- Remove the chicken from the fridge and let it sit at room temperature for 10-15 minutes before cooking.
- In a small bowl, mix the cornstarch and water to create a slurry.
- Heat vegetable oil in a large skillet over medium-high heat. Add the marinated chicken, reserving the marinade.
- Cook the chicken for 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
- Remove the chicken from the skillet and let it rest before slicing into bite-sized pieces.
- In the same skillet, pour in the reserved marinade and bring to a simmer. Add the cornstarch slurry and stir until the sauce thickens (about 2-3 minutes).
- Return the sliced chicken to the skillet, tossing it in the thickened sauce until well coated. Remove from heat.
- Bring a large pot of salted water to a boil. Cook the spaghetti or egg noodles according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the cooked noodles to the skillet with garlic. Pour in the soy sauce, oyster sauce, sesame oil, and sugar. Toss until well coated and heated through (about 2-3 minutes).
- Stir in the chopped green onions and mix well. Adjust seasoning if necessary.
- Serve the garlic noodles on a plate, topped with the teriyaki chicken and drizzled with extra sauce if desired. Garnish with sesame seeds if using.

- For a spicier kick, consider adding red pepper flakes to the garlic noodles.
- You can substitute chicken with tofu or shrimp for a different protein option.
