Ingredients

Scale
  • 1 cup crushed pineapple, drained
  • 1 cup sweetened shredded coconut
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup chopped macadamia nuts (optional)
  • Whipped cream for serving (optional)
  • Fresh pineapple slices for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk, starting and ending with the flour mixture.
  6. Gently fold in the crushed pineapple, shredded coconut, and chopped macadamia nuts (if using).
  7. Grease a 9×13 inch baking dish with butter or non-stick spray.
  8. Pour the batter into the prepared baking dish, spreading it out evenly.
  9. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Remove from the oven and let cool in the pan for about 10-15 minutes.
  11. Cut the dessert into squares or rectangles (about 12 pieces).
  12. Serve each piece with a dollop of whipped cream on top, if desired.
  13. Garnish with fresh pineapple slices or a sprinkle of additional shredded coconut.
  14. Enjoy with friends and family!

Notes

  • For a chocolate twist, consider adding chocolate chips to the batter for an extra layer of flavor.
  • Feel free to adjust the amount of coconut or pineapple based on your taste preferences.
