- 1 large head of iceberg lettuce
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/4 cup black olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
Instructions
- Wash the iceberg lettuce thoroughly under cold running water. Shake off excess water and pat dry.
- Cut the lettuce into quarters, remove the core, and chop into bite-sized pieces. Place in a large salad bowl.
- Rinse cherry tomatoes, slice in half, and add to the bowl.
- Wash cucumber, slice in half lengthwise, scoop out seeds if desired, and dice into small cubes. Add to the salad bowl.
- Peel and thinly slice the red onion. If desired, soak in cold water for 10 minutes to mellow the flavor, then drain and add to the bowl.
- Crumble feta cheese over the salad, sprinkle with black olives, and add chopped parsley.
- In a small mixing bowl, combine olive oil and red wine vinegar.
- Add dried oregano and Dijon mustard to the bowl.
- Whisk until well combined and slightly thickened.
- Season with salt and pepper to taste.
- Toss the salad ingredients gently to mix.
- Drizzle half of the oregano dressing over the salad and toss again to coat.
- Taste and adjust seasoning or add more dressing as needed.
- Transfer to a serving platter or keep in the bowl for family-style serving. Garnish with extra parsley or feta if desired.
- Serve immediately and enjoy!
