  • 1 large head of iceberg lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup black olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash the iceberg lettuce thoroughly under cold running water. Shake off excess water and pat dry.
  2. Cut the lettuce into quarters, remove the core, and chop into bite-sized pieces. Place in a large salad bowl.
  3. Rinse cherry tomatoes, slice in half, and add to the bowl.
  4. Wash cucumber, slice in half lengthwise, scoop out seeds if desired, and dice into small cubes. Add to the salad bowl.
  5. Peel and thinly slice the red onion. If desired, soak in cold water for 10 minutes to mellow the flavor, then drain and add to the bowl.
  6. Crumble feta cheese over the salad, sprinkle with black olives, and add chopped parsley.
  7. In a small mixing bowl, combine olive oil and red wine vinegar.
  8. Add dried oregano and Dijon mustard to the bowl.
  9. Whisk until well combined and slightly thickened.
  10. Season with salt and pepper to taste.
  11. Toss the salad ingredients gently to mix.
  12. Drizzle half of the oregano dressing over the salad and toss again to coat.
  13. Taste and adjust seasoning or add more dressing as needed.
  14. Transfer to a serving platter or keep in the bowl for family-style serving. Garnish with extra parsley or feta if desired.
  15. Serve immediately and enjoy!
