  • 1 cup of shredded sharp cheddar cheese
  • 1/2 cup of sour cream
  • 1/4 cup of chopped green onions
  • 1/4 cup of cooked and crumbled bacon (optional)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • 1 cup of all-purpose flour
  • 1 large egg
  • 1/2 cup of breadcrumbs (for coating)
  • Vegetable oil (for frying)

Instructions

  1. Wash the russet potatoes thoroughly under cold water to remove any dirt.
  2. Place the potatoes in a large pot and cover them with cold water. Add a pinch of salt.
  3. Bring to a boil over medium-high heat, then reduce to medium and simmer for 20-25 minutes until fork-tender.
  4. Drain the potatoes and let them cool for a few minutes.
  5. Peel off the skins when cool enough to handle.
  6. Mash the peeled potatoes in a large mixing bowl until smooth.
  7. Add cheddar cheese, sour cream, green onions, crumbled bacon (if using), garlic powder, onion powder, salt, and pepper. Mix until combined.
  8. Add flour and egg, mixing until just incorporated. Adjust with more flour if too wet.
  9. Shape the mixture into 1-2 inch balls using a cookie scoop or your hands.
  10. Place the shaped bites on a parchment-lined baking sheet, leaving space between them.
  11. Chill in the refrigerator for about 30 minutes.
  12. Set up a breading station with breadcrumbs in one dish and a beaten egg with a splash of water in another.
  13. Dip each bite into the egg wash, then roll in breadcrumbs until fully coated.
  14. Place the coated bites back on the baking sheet.
  15. Heat about 2 inches of vegetable oil in a large skillet over medium heat.
  16. Test the oil with a small piece of bread; if it sizzles, it’s ready.
  17. Fry a few potato bites at a time for 3-4 minutes on each side until golden brown.
  18. Remove from oil and drain on a paper towel-lined plate.
