Ingredients

  • 12 ounces of pasta (penne or rotini)
  • 1 pound of kielbasa sausage, sliced into half-moons
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the pasta and cook according to package instructions until al dente (8-10 minutes). Stir occasionally to prevent sticking.
  3. Reserve 1 cup of pasta water, then drain the rest and set the pasta aside.
  4. In a large skillet, heat olive oil over medium heat.
  5. Add sliced kielbasa and cook for 5-7 minutes until browned and slightly crispy.
  6. Add diced onion and cook for another 3-4 minutes until translucent.
  7. Stir in minced garlic, red bell pepper, and green bell pepper. Cook for an additional 5 minutes.
  8. Add halved cherry tomatoes, dried oregano, dried basil, and red pepper flakes (if using). Season with salt and pepper. Cook for another 3-4 minutes until tomatoes start to break down.
  9. Reduce heat to low and pour in heavy cream. Stir to combine.
  10. Allow to simmer for about 5 minutes, stirring occasionally.
  11. Gradually add grated Parmesan cheese, stirring until melted and creamy. If too thick, add reserved pasta water to reach desired consistency.
  12. Add cooked pasta to the skillet and gently toss until well coated with the sauce.
  13. If dry, add more reserved pasta water until creamy texture is achieved.
  14. Taste and adjust seasoning with salt, pepper, or herbs if needed.
  15. Remove from heat and serve hot, garnished with freshly chopped parsley and extra Parmesan cheese if desired.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, warm in a skillet over medium heat, adding a splash of milk or cream to loosen the sauce if needed.
