Instructions
- Wash and peel the russet potatoes. Cut them into even-sized cubes, about 1 to 2 inches.
- Place the cubed potatoes in a large pot and cover with cold water. Add a pinch of salt.
- Bring to a boil over medium-high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
- Drain the potatoes and let them sit for a minute to evaporate excess moisture.
- In a large mixing bowl, mash the drained potatoes to your desired creaminess.
- Add the softened butter and mix until incorporated.
- Stir in the sour cream and milk, adjusting the milk for desired creaminess.
- Add garlic powder, onion powder, and season with salt and pepper to taste.
- Fold in the shredded cheddar and grated Parmesan cheese.
- Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Transfer the mashed potato mixture to the baking dish, smoothing the top.
- If desired, sprinkle breadcrumbs over the top for a crunchy texture.
- Bake in the preheated oven for 25-30 minutes until the top is golden brown and edges are bubbling.
- Cover loosely with aluminum foil if the top browns too quickly.
