  • Pinch of salt
  • 1 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips
  • Optional: 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, mash the ripe bananas until smooth, leaving a few small chunks for texture if desired.
  3. Add melted coconut oil (or butter) to the mashed bananas and stir until combined. Then, mix in brown sugar, egg, and vanilla extract until smooth and creamy.
  4. Sprinkle baking soda and salt over the mixture. If using, add cinnamon. Gently fold in the flour with a spatula or wooden spoon, being careful not to overmix.
  5. Fold in the semi-sweet chocolate chips until just combined.
  6. Line a standard muffin tin with paper liners or grease it with cooking spray.
  7. Fill each muffin cup about 2/3 full with the batter.
  8. Bake in the preheated oven for 18-20 minutes, checking for doneness with a toothpick.
  9. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
