Ingredients
Scale
- 2 to 3 pounds of pork loin or pork shoulder
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 cup fresh orange juice (about 4–5 oranges)
- Zest of 2 oranges
- 1/4 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cinnamon
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 tablespoon cornstarch (optional, for thickening the glaze)
- 2 tablespoons water (optional, for thickening the glaze)
- Fresh parsley or cilantro, for garnish (optional)
Instructions
- In a medium bowl, combine the fresh orange juice, orange zest, honey, soy sauce, minced garlic, grated ginger, ground cinnamon, and red pepper flakes (if using). Whisk until well combined.
- Generously season the pork loin or shoulder with salt and pepper on all sides.
- Place the seasoned pork in a large resealable plastic bag or shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 2 hours, ideally overnight.
- Preheat your oven to 375°F (190°C).
- After marinating, remove the pork from the refrigerator and let it sit at room temperature for about 30 minutes.
- In a large oven-safe skillet or roasting pan, heat the olive oil over medium-high heat. Add the pork and sear on all sides until golden brown, about 3-4 minutes per side.
- Pour the remaining marinade over the pork in the skillet. Transfer to the preheated oven and roast for about 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C). Baste with the marinade every 20-30 minutes.
- If desired, mix cornstarch with 2 tablespoons of water in a small bowl. About 15 minutes before the pork is done, stir this mixture into the pan juices to thicken the glaze.
- Once cooked, remove the pork from the oven and let it rest on a cutting board, loosely covered with aluminum foil, for 10-15 minutes.
- Slice the pork into thick pieces and arrange on a serving platter. Drizzle with pan juices or thicker glaze, and garnish with fresh parsley or cilantro. Serve with your favorite sides.
Notes
- For best results, marinate the pork overnight to enhance flavor.
- Adjust the thickness of the glaze according to your preference by using the cornstarch slurry.
- This dish pairs well with roasted vegetables, rice, or a fresh salad.
