  • Author: Dottie
  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Description

This Breakfast Sausage Pancake Casserole combines savory sausage with fluffy pancake batter for a hearty brunch dish. Easy to prepare and customizable, it’s perfect for gatherings or cozy mornings. Enjoy warm, drizzled with maple syrup, and pair with fresh fruit or bacon for a complete meal.

Ingredients

Scale
  • 1 pound breakfast sausage
  • 8 large eggs
  • 2 cups milk
  • 2 cups pancake mix
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded cheddar cheese (optional)
  • Butter or cooking spray (for greasing the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the breakfast sausage. Use a wooden spoon to break it up into small pieces as it cooks.
  3. Cook the sausage until browned and no longer pink, about 5-7 minutes, stirring occasionally.
  4. Drain any excess grease from the skillet and set the sausage aside to cool slightly.
  5. In a large mixing bowl, crack the 8 large eggs and whisk until well beaten.
  6. Add the 2 cups of milk to the eggs and whisk until combined.
  7. Add the pancake mix, maple syrup, vanilla extract, baking powder, and salt to the egg mixture.
  8. Mix until just combined, being careful not to overmix; a few lumps are fine.
  9. If using cheese, fold in the shredded cheddar cheese.
  10. Grease a 9×13 inch baking dish with butter or cooking spray.
  11. Spread the cooked sausage evenly across the bottom of the dish.
  12. Pour the pancake batter over the sausage, ensuring it covers evenly.
  13. Drizzle a little extra maple syrup on top if desired.
  14. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  15. Monitor during the last few minutes to prevent over-browning; cover loosely with aluminum foil if necessary.
  16. Once done, remove from the oven and let cool for 5-10 minutes before slicing.
  17. Slice into squares and serve warm, drizzled with maple syrup.
  18. Pair with fresh fruit, yogurt, or crispy bacon for a complete breakfast.
  19. Store leftovers in an airtight container in the fridge for up to 3 days; reheat before serving.

Notes

  • For added flavor, consider mixing in chopped bell peppers, onions, or spinach with the sausage.
  • For a sweeter twist, add chocolate chips or blueberries to the batter.
  • Experiment with different cheeses, such as pepper jack or cream cheese.
  • This recipe can be doubled for larger gatherings; adjust cooking time as needed.
