- 1 cup natural peanut butter (creamy or crunchy)
- 1/2 cup honey or maple syrup
- 1 cup rolled oats
- 1/2 cup ground flaxseed
- 1/2 cup chocolate chips (dark, semi-sweet, or dairy-free)
- 1/2 cup shredded coconut (unsweetened)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- Pinch of salt
Instructions
- In a large mixing bowl, add 1 cup of natural peanut butter.
- Pour in 1/2 cup of honey or maple syrup and mix until smooth and creamy.
- Add 1 cup of rolled oats and 1/2 cup of ground flaxseed to the mixture.
- Toss in 1/2 cup of chocolate chips and 1/2 cup of shredded coconut.
- Add 1 teaspoon of vanilla extract, a pinch of salt, and optional 1/2 teaspoon of cinnamon.
- Mix everything together until well combined.
- Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for about 30 minutes.
- Once chilled, remove the bowl from the refrigerator and roll the mixture into balls (about 1 tablespoon each).
- Continue rolling until all the mixture is used, yielding about 20-25 energy balls.
- Optionally, roll some balls in additional shredded coconut or crushed nuts for a fun coating.
- Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.

- For a vegan option, use maple syrup instead of honey.
