  • 1/2 cup shredded coconut (unsweetened)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt

Instructions

  1. In a large mixing bowl, add 1 cup of natural peanut butter.
  2. Pour in 1/2 cup of honey or maple syrup and mix until smooth and creamy.
  3. Add 1 cup of rolled oats and 1/2 cup of ground flaxseed to the mixture.
  4. Toss in 1/2 cup of chocolate chips and 1/2 cup of shredded coconut.
  5. Add 1 teaspoon of vanilla extract, a pinch of salt, and optional 1/2 teaspoon of cinnamon.
  6. Mix everything together until well combined.
  7. Cover the bowl with plastic wrap or a clean kitchen towel and refrigerate for about 30 minutes.
  8. Once chilled, remove the bowl from the refrigerator and roll the mixture into balls (about 1 tablespoon each).
  9. Continue rolling until all the mixture is used, yielding about 20-25 energy balls.
  10. Optionally, roll some balls in additional shredded coconut or crushed nuts for a fun coating.
  11. Store in an airtight container in the refrigerator for up to a week or freeze for up to 3 months.
