  • 2 cups fresh pineapple, peeled and chopped
  • 2 cups fresh strawberries, hulled and halved
  • 4 cups cold water
  • 1/4 cup sugar (adjust to taste)
  • Juice of 1 lime
  • Ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Gather all your ingredients. Peel the pineapple and chop it into small chunks to yield about 2 cups. Rinse the strawberries, remove the green tops, and slice them in half to have about 2 cups.
  2. In a blender, combine the chopped pineapple and halved strawberries. Add 4 cups of cold water, 1/4 cup of sugar (adjust to taste), and the juice of 1 lime. Blend on high speed until completely smooth, about 30-60 seconds.
  3. If desired, strain the mixture to remove pulp or seeds. Place a fine-mesh strainer or cheesecloth over a bowl or pitcher, pour the blended mixture in, and press down with a spatula to extract as much liquid as possible. Discard the pulp or save it for another use.
  4. Taste the agua fresca and adjust sweetness if needed. Transfer to a pitcher and refrigerate for at least 30 minutes. When ready to serve, fill glasses with ice cubes and pour the chilled agua fresca over the ice. Garnish with fresh mint leaves if desired.
  5. Serve immediately for a refreshing drink. Store leftovers in the refrigerator for up to 2 days, stirring before serving.
