This Pink Raspberry Lemonade is a refreshing summer drink that blends tart lemon juice with sweet raspberry puree, creating a delightful and vibrant beverage. Garnished with fresh mint and raspberries, it’s perfect for any occasion and sure to impress your guests!

- 1 cup fresh raspberries (plus extra for garnish)
- 1 cup freshly squeezed lemon juice (about 4–6 lemons)
- 1 cup granulated sugar
- 4 cups cold water
- 1 cup sparkling water (optional, for fizz)
- Ice cubes
- Fresh mint leaves (for garnish, optional)
Instructions
- Rinse the fresh raspberries under cold water to remove any dirt or impurities. Gently pat them dry with a paper towel.
- In a blender, add the rinsed raspberries. For a smoother texture, strain the raspberries through a fine mesh sieve to remove the seeds, if desired.
- Blend the raspberries on high speed until completely pureed (about 30 seconds to a minute).
- Pour the raspberry puree into a fine mesh sieve placed over a bowl. Use a spatula or the back of a spoon to press the puree through the sieve, extracting as much juice as possible while leaving the seeds behind. Discard the seeds.
- You should have about 1 cup of raspberry juice. Set this aside for later.
- In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Heat over medium heat, stirring occasionally until the sugar has completely dissolved (about 3-5 minutes).
- Once the sugar is dissolved, remove the saucepan from the heat and let it cool for a few minutes.
- While the syrup is cooling, squeeze the lemons to get 1 cup of fresh lemon juice. Rolling the lemons on the counter before cutting helps release more juice.
- Once the syrup has cooled, combine the lemon juice with the syrup in a large pitcher. Stir well to combine.
- To the pitcher with the lemon syrup, add the raspberry juice prepared earlier. Stir gently to combine.
- Pour in the remaining 3 cups of cold water. Adjust the water to taste for a stronger lemonade flavor if desired.
- Taste the lemonade; if its too tart, add a little more sugar or water as needed.
- If desired, mix in 1 cup of sparkling water for added fizz.
- Cover the pitcher with a lid or plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld.
- When ready to serve, fill glasses with ice cubes (large ice cubes are recommended to prevent quick dilution).
- Pour the chilled pink raspberry lemonade over the ice-filled glasses, filling them about three-quarters full.
- Garnish each glass with a few fresh raspberries and a sprig of mint for a beautiful presentation.
