  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • 1 cup sparkling water (optional, for fizz)
  • Ice cubes
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Rinse the fresh raspberries under cold water to remove any dirt or impurities. Gently pat them dry with a paper towel.
  2. In a blender, add the rinsed raspberries. For a smoother texture, strain the raspberries through a fine mesh sieve to remove the seeds, if desired.
  3. Blend the raspberries on high speed until completely pureed (about 30 seconds to a minute).
  4. Pour the raspberry puree into a fine mesh sieve placed over a bowl. Use a spatula or the back of a spoon to press the puree through the sieve, extracting as much juice as possible while leaving the seeds behind. Discard the seeds.
  5. You should have about 1 cup of raspberry juice. Set this aside for later.
  6. In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water. Heat over medium heat, stirring occasionally until the sugar has completely dissolved (about 3-5 minutes).
  7. Once the sugar is dissolved, remove the saucepan from the heat and let it cool for a few minutes.
  8. While the syrup is cooling, squeeze the lemons to get 1 cup of fresh lemon juice. Rolling the lemons on the counter before cutting helps release more juice.
  9. Once the syrup has cooled, combine the lemon juice with the syrup in a large pitcher. Stir well to combine.
  10. To the pitcher with the lemon syrup, add the raspberry juice prepared earlier. Stir gently to combine.
  11. Pour in the remaining 3 cups of cold water. Adjust the water to taste for a stronger lemonade flavor if desired.
  12. Taste the lemonade; if it’s too tart, add a little more sugar or water as needed.
  13. If desired, mix in 1 cup of sparkling water for added fizz.
  14. Cover the pitcher with a lid or plastic wrap and refrigerate for at least 1-2 hours to allow the flavors to meld.
  15. When ready to serve, fill glasses with ice cubes (large ice cubes are recommended to prevent quick dilution).
  16. Pour the chilled pink raspberry lemonade over the ice-filled glasses, filling them about three-quarters full.
  17. Garnish each glass with a few fresh raspberries and a sprig of mint for a beautiful presentation.
