Instructions
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chopped onion and sauté for about 3-4 minutes until translucent and fragrant.
- Add the minced garlic and cook for an additional minute, stirring frequently.
- Add the pork pieces, seasoning with smoked paprika, ground cumin, salt, and pepper. Stir to coat the pork with the spices.
- Cook the pork for about 5-7 minutes, stirring occasionally, until browned and cooked through.
- Reduce the heat to medium-low. Pour in the creamed corn, heavy cream, and chicken broth. Stir to combine.
- Add the frozen corn kernels and stir until well mixed.
- Let the mixture simmer for about 10 minutes, stirring occasionally.
- Taste the sauce and adjust seasoning if necessary.
- Gradually sprinkle in the shredded cheddar cheese while stirring continuously until melted.
- Continue to cook for another 5 minutes, allowing the sauce to thicken.
- Spoon the creamy pork and corn mixture into a large serving bowl.
- Garnish with freshly chopped parsley.
