Description

These Pumpkin Spice Rice Krispie Treats offer a delightful fall twist on the classic dessert, blending crunchy Rice Krispies with warm pumpkin and spice flavors. Easy to make and perfect for gatherings, they are sure to be a hit!

Ingredients

Scale
  • 6 cups Rice Krispies cereal
  • 1 package (10 oz) marshmallows (or 4 cups mini marshmallows)
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup white chocolate chips (optional)
  • 1/2 cup chopped pecans or walnuts (optional)
  • Pinch of salt

Instructions

  1. Start by gathering all your ingredients. It’s always easier to have everything in one place before you begin cooking.
  2. In a large saucepan, melt the butter over low heat. Make sure to keep an eye on it so it doesn’t brown.
  3. Once the butter is melted, add the marshmallows to the saucepan. Stir continuously until the marshmallows are completely melted and smooth.
  4. After the marshmallows are melted, remove the saucepan from the heat. Stir in the pumpkin puree, vanilla extract, pumpkin pie spice, and a pinch of salt. Mix until everything is well combined.
  5. In a large mixing bowl, add the Rice Krispies cereal.
  6. Pour the melted marshmallow mixture over the Rice Krispies. Use a spatula or wooden spoon to gently fold the mixture together.
  7. If you’re adding white chocolate chips and nuts, now is the time to fold them in.
  8. Prepare a 9×13 inch baking dish by greasing it lightly with butter or cooking spray.
  9. Transfer the Rice Krispie mixture into the prepared baking dish. Use a spatula to spread it out evenly.
  10. Once the mixture is evenly spread and pressed down, let it cool at room temperature for about 30 minutes.
  11. After the treats have cooled and set, it’s time to cut them into squares. Use a sharp knife to cut them into your desired size.
  12. Once cut, you can serve them immediately or store them in an airtight container.
  13. If you want to get a little fancy, you can drizzle some melted white chocolate over the top of the treats before serving.

Notes

  • For a festive touch, consider adding fall-themed sprinkles on top before the chocolate sets.
  • You can substitute pumpkin puree with applesauce or mashed bananas for a different flavor twist, but this will change the flavor profile.
