- 6 cups Rice Krispies cereal
- 1 package (10 oz) marshmallows (or 4 cups mini marshmallows)
- 3 tablespoons unsalted butter

- 1 teaspoon pumpkin pie spice
- 1/2 cup pumpkin puree (not pumpkin pie filling)
- 1/2 cup white chocolate chips (optional)
- 1/2 cup chopped pecans or walnuts (optional)
- Pinch of salt
Instructions
- Start by gathering all your ingredients. Its always easier to have everything in one place before you begin cooking.
- In a large saucepan, melt the butter over low heat. Make sure to keep an eye on it so it doesnt brown.
- Once the butter is melted, add the marshmallows to the saucepan. Stir continuously until the marshmallows are completely melted and smooth.
- After the marshmallows are melted, remove the saucepan from the heat. Stir in the pumpkin puree, vanilla extract, pumpkin pie spice, and a pinch of salt. Mix until everything is well combined.
- In a large mixing bowl, add the Rice Krispies cereal.
- Pour the melted marshmallow mixture over the Rice Krispies. Use a spatula or wooden spoon to gently fold the mixture together.
- If youre adding white chocolate chips and nuts, now is the time to fold them in.
- Prepare a 9×13 inch baking dish by greasing it lightly with butter or cooking spray.
- Transfer the Rice Krispie mixture into the prepared baking dish. Use a spatula to spread it out evenly.
- Once the mixture is evenly spread and pressed down, let it cool at room temperature for about 30 minutes.
- After the treats have cooled and set, its time to cut them into squares. Use a sharp knife to cut them into your desired size.
- Once cut, you can serve them immediately or store them in an airtight container.
- If you want to get a little fancy, you can drizzle some melted white chocolate over the top of the treats before serving.
