  • 2 tablespoons vegetable oil
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 cups chicken broth
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 8 oz egg noodles or your choice of noodles
  • 2 green onions, chopped (for garnish)
  • Fresh cilantro (for garnish, optional)

Instructions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  3. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  4. Place the chicken thighs in the pot and sear for about 5 minutes on each side until golden brown.
  5. In a medium bowl, combine chicken broth, soy sauce, oyster sauce, rice vinegar, brown sugar, sesame oil, black pepper, and red pepper flakes (if using). Whisk until the sugar dissolves.
  6. Pour the braising liquid over the browned chicken, ensuring it is submerged as much as possible.
  7. Bring to a gentle boil, then reduce heat to low, cover, and simmer for 30-40 minutes.
  8. In a separate pot, bring water to a boil and add a pinch of salt.
  9. Add the noodles and cook according to package instructions (usually 5-7 minutes) until al dente.
  10. Drain the noodles and set aside, optionally tossing with a little oil to prevent sticking.
  11. Remove the pot from heat and take the chicken out using tongs, placing it on a cutting board.
  12. Shred the chicken into bite-sized pieces using two forks.
  13. Return the shredded chicken to the pot and stir it into the braising liquid.
