  • 1/2 cup dry white wine (like Sauvignon Blanc)
  • 1 lemon, juiced and zested
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the linguine and cook according to package instructions (8-10 minutes) until al dente, stirring occasionally.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the linguine and toss with a little olive oil to prevent sticking.
  5. In a large skillet, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat.
  6. Add minced garlic and red pepper flakes, sauté for about 30 seconds until fragrant.
  7. Add shrimp in a single layer, season with salt and pepper, and cook for 2-3 minutes until pink and opaque.
  8. Flip and cook for another 2-3 minutes until fully cooked. Remove shrimp and set aside.
  9. Pour in the white wine, scraping up any bits from the pan. Let simmer for 2-3 minutes until reduced.
  10. Stir in lemon juice and zest.
  11. Reduce heat to low, add remaining butter, and stir until melted. Adjust consistency with reserved pasta water if needed.
  12. Toss the drained linguine in the skillet with the sauce.
  13. Add cooked shrimp back into the skillet and toss until combined and heated through.
  14. Sprinkle chopped parsley over the top and toss again.
  15. Serve immediately, twirling pasta onto plates for presentation.
  16. Optionally sprinkle with grated Parmesan cheese and extra parsley leaves.
