Ingredients
Scale
- 1 pound ground beef (80/20 blend)
- Salt and pepper, to taste
- 4 slices of American cheese
- 4 burger buns (preferably brioche)
- Butter, for toasting the buns
- Optional toppings: lettuce, tomato, pickles, onions
- 1/2 cup mayonnaise
- 1/4 cup cooked and crumbled bacon (about 4 slices)
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
Instructions
- In a medium mixing bowl, combine the mayonnaise, crumbled bacon, Dijon mustard, apple cider vinegar, garlic powder, and smoked paprika.
- Using a whisk or a fork, mix everything together until its well combined and smooth. Ensure the bacon is evenly distributed throughout the sauce.
- Season the sauce with salt and pepper to taste. Remember, the bacon will add some saltiness, so taste as you go!
- Once mixed, cover the bowl with plastic wrap and refrigerate the Baconnaise sauce for at least 30 minutes to allow the flavors to meld.
- Preheat your griddle or cast-iron skillet over medium-high heat until hot enough to create a nice sear on the burgers.
- Divide the ground beef into four equal portions (about 4 ounces each) and gently form them into loose balls.
- Place the beef balls onto the skillet, leaving enough space between each one. You should hear a satisfying sizzle!
- Using a sturdy spatula, press down firmly on each beef ball to flatten it into a patty, creating a thin patty that will cook quickly and develop a nice crust.
- Season the patties generously with salt and pepper.
- Let the patties cook for about 2-3 minutes without moving them, allowing the crust to form. Theyre ready to flip when the edges start to brown and juices pool on top.
- Carefully flip each patty using your spatula. Immediately place a slice of American cheese on top of each patty and cover the skillet with a lid for about 1 minute to help the cheese melt.
- In a separate skillet or on the same griddle (if theres room), add a small amount of butter and let it melt over medium heat.
- Once the butter is melted and bubbling, place the burger buns cut-side down onto the skillet.
- Toast the buns for about 1-2 minutes, or until they are golden brown and crispy. Keep an eye on them to prevent burning!
- Spread a generous amount of the Baconnaise sauce on the bottom half of each toasted bun.
- Place a cheesy smash burger patty on top of the sauce.
- Add any optional toppings such as lettuce, tomato, pickles, or onions.
- Top with the other half of the bun and serve immediately.
Notes
- For extra flavor, consider adding additional spices to the beef or experimenting with different types of cheese.
- The Baconnaise sauce can be made ahead of time and stored in the refrigerator for up to a week.
