- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 4 large flour tortillas
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup corn (canned or frozen)
- 1 cup black beans (canned, rinsed, and drained)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup sour cream
- 1/4 cup salsa
- 1 avocado, sliced (optional)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your grill or stovetop grill pan over medium-high heat. Ensure its clean and lightly oiled.
- Pound the chicken breasts to an even thickness of about 1/2 inch.
- In a small bowl, mix chili powder, cumin, garlic powder, onion powder, salt, and pepper.
- Rub olive oil over the chicken breasts and coat them with the spice mixture.
- Grill the chicken for 6-7 minutes on one side without moving.
- Flip the chicken and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
- Remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips.
- Wash and dry the lettuce.
- Dice the tomatoes into small pieces.
- If using canned corn and black beans, drain and rinse them. If using frozen corn, microwave until heated through.
- In a large bowl, combine corn and black beans.
- Heat tortillas in a dry skillet or wrap in foil and warm in the oven at 350°F (175°C) for about 10 minutes.
- Lay a tortilla flat on a clean surface.
- In the center, layer shredded lettuce, followed by the corn and black bean mixture.
- Add slices of grilled chicken on top.
- Sprinkle diced tomatoes and shredded cheese over the chicken.
- If using, add avocado slices.
- Drizzle sour cream and salsa over the top.
- Fold the sides of the tortilla inwards, then roll from the bottom up, tucking in the filling as you go.
Notes
- Feel free to customize the fillings based on your preferences. Add other veggies or swap out the protein for beef or tofu.
- For extra flavor, marinate the chicken in the spice mixture for a few hours before grilling.
