Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup corn (canned or frozen)
  • 1 cup black beans (canned, rinsed, and drained)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/4 cup salsa
  • 1 avocado, sliced (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat your grill or stovetop grill pan over medium-high heat. Ensure it’s clean and lightly oiled.
  2. Pound the chicken breasts to an even thickness of about 1/2 inch.
  3. In a small bowl, mix chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  4. Rub olive oil over the chicken breasts and coat them with the spice mixture.
  5. Grill the chicken for 6-7 minutes on one side without moving.
  6. Flip the chicken and grill for another 6-7 minutes until the internal temperature reaches 165°F (75°C).
  7. Remove the chicken from the grill and let it rest for 5 minutes before slicing into thin strips.
  8. Wash and dry the lettuce.
  9. Dice the tomatoes into small pieces.
  10. If using canned corn and black beans, drain and rinse them. If using frozen corn, microwave until heated through.
  11. In a large bowl, combine corn and black beans.
  12. Heat tortillas in a dry skillet or wrap in foil and warm in the oven at 350°F (175°C) for about 10 minutes.
  13. Lay a tortilla flat on a clean surface.
  14. In the center, layer shredded lettuce, followed by the corn and black bean mixture.
  15. Add slices of grilled chicken on top.
  16. Sprinkle diced tomatoes and shredded cheese over the chicken.
  17. If using, add avocado slices.
  18. Drizzle sour cream and salsa over the top.
  19. Fold the sides of the tortilla inwards, then roll from the bottom up, tucking in the filling as you go.

Notes

  • Feel free to customize the fillings based on your preferences. Add other veggies or swap out the protein for beef or tofu.
  • For extra flavor, marinate the chicken in the spice mixture for a few hours before grilling.
