  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar (adjust to taste)
  • 2 cups water
  • 1 teaspoon lemon zest (optional, for extra flavor)
  • Pinch of salt

Instructions

  1. Wash the strawberries thoroughly under cold water. Remove the green tops and slice them into halves or quarters.
  2. In a blender, add the sliced strawberries. Blend until pureed for a smooth texture or pulse for a chunkier consistency.
  3. Taste the strawberry mixture and add sugar if needed. Blend briefly to combine.
  4. In a medium saucepan, combine 1 cup of water and 1 cup of granulated sugar. Heat over medium heat, stirring until the sugar dissolves.
  5. Remove from heat and let cool for a few minutes.
  6. In a large mixing bowl, combine the lemon juice, remaining 1 cup of water, and the simple syrup. Stir well. Add lemon zest if using.
  7. Taste the lemonade mixture and adjust sweetness with more sugar if desired.
  8. In a large pitcher or bowl, gently fold the strawberry mixture into the lemonade base, creating swirls.
  9. Taste and adjust sweetness if necessary.
  10. Ensure popsicle molds are clean and dry. Alternatively, use small paper cups and wooden sticks.
  11. Pour the mixture into the molds, filling them about three-quarters full.
  12. If using paper cups, insert a wooden stick into the center of each cup.
  13. Tap the molds gently on the counter to remove air bubbles.
  14. Place the filled molds in the freezer, standing upright.
  15. Freeze for at least 4-6 hours or until solid. Overnight is best for optimal results.
  16. Check for firmness before serving.
  17. Run warm water over the outside of the molds for a few seconds to loosen.
  18. Gently pull on the sticks to release the popsicles. Use more warm water if needed.
  19. Place the popsicles on a plate or baking sheet lined with parchment paper.
