- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1 tablespoon gelatin powder
- 3 tablespoons cold water
- 1/4 cup powdered sugar (for sweetening the whipped cream)
- Fresh strawberries and mint leaves for garnish (optional)
Instructions
- Wash the strawberries thoroughly under cold water, remove the green tops, and slice them into smaller pieces.
- In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat.
- Let the mixture sit for 10-15 minutes to macerate.
- Transfer the mixture to a blender or food processor and blend until smooth.
- Strain the puree through a fine-mesh sieve into a bowl to remove seeds. Set aside.
- In a small bowl, sprinkle gelatin powder over cold water and let it sit for 5 minutes to bloom.
- Microwave for 10-15 seconds until dissolved, stirring to remove lumps. Let cool slightly before adding to the strawberry puree.
- In a large mixing bowl, pour in the heavy whipping cream.
- Add vanilla extract and powdered sugar.
- Beat on medium-high speed until soft peaks form (about 3-5 minutes).
- Gently fold in the strawberry puree with the dissolved gelatin.
- Spoon or pipe the strawberry mousse into serving glasses, filling them about three-quarters full.
- Tap the glasses on the counter to remove air bubbles.
- Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
- Once set, garnish with whipped cream, fresh strawberries, and mint leaves.
- Optionally drizzle with chocolate sauce or berry coulis before serving.

- Ensure the bowl and beaters are cold for better whipping results.
- For a chunkier mousse, blend the strawberries less.
- The mousse can be made a day in advance for convenience.
