  • 1 tablespoon gelatin powder
  • 3 tablespoons cold water
  • 1/4 cup powdered sugar (for sweetening the whipped cream)
  • Fresh strawberries and mint leaves for garnish (optional)

Instructions

  1. Wash the strawberries thoroughly under cold water, remove the green tops, and slice them into smaller pieces.
  2. In a medium bowl, combine the sliced strawberries, granulated sugar, and lemon juice. Toss gently to coat.
  3. Let the mixture sit for 10-15 minutes to macerate.
  4. Transfer the mixture to a blender or food processor and blend until smooth.
  5. Strain the puree through a fine-mesh sieve into a bowl to remove seeds. Set aside.
  6. In a small bowl, sprinkle gelatin powder over cold water and let it sit for 5 minutes to bloom.
  7. Microwave for 10-15 seconds until dissolved, stirring to remove lumps. Let cool slightly before adding to the strawberry puree.
  8. In a large mixing bowl, pour in the heavy whipping cream.
  9. Add vanilla extract and powdered sugar.
  10. Beat on medium-high speed until soft peaks form (about 3-5 minutes).
  11. Gently fold in the strawberry puree with the dissolved gelatin.
  12. Spoon or pipe the strawberry mousse into serving glasses, filling them about three-quarters full.
  13. Tap the glasses on the counter to remove air bubbles.
  14. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  15. Once set, garnish with whipped cream, fresh strawberries, and mint leaves.
  16. Optionally drizzle with chocolate sauce or berry coulis before serving.
