Enjoy a delightful Japanese-inspired Strawberry Sando, featuring fluffy white bread filled with fresh strawberries and whipped cream. This light and sweet treat is perfect for dessert or a snack, combining beautiful presentation with delicious flavors.

- 8 slices of soft white bread (preferably shokupan or any fluffy bread)
- 1 cup of fresh strawberries, hulled and sliced
- 2 tablespoons of granulated sugar
- 1 cup of heavy whipping cream
- 2 tablespoons of powdered sugar
- 1 teaspoon of vanilla extract
- Optional: mint leaves for garnish
Instructions
- Wash the strawberries under cold water to remove any dirt or impurities.
- Gently pat them dry with a paper towel.
- Hull the strawberries using a paring knife or a strawberry huller, removing the green tops and white core.
- Slice the strawberries into thin rounds, about 1/4 inch thick.
- In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar and toss gently to coat.
- Let the strawberries sit for about 10-15 minutes to release their juices.
- In a large mixing bowl, pour in 1 cup of heavy whipping cream.
- Add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract.
- Using an electric mixer or a whisk, whip the cream on medium speed until soft peaks form.
- Be careful not to over-whip; the cream should be fluffy and light.
- Lay out 4 slices of soft white bread on a clean surface.
- Spread a generous layer of whipped cream on each slice of bread.
- On two of the slices, layer the macerated strawberries on top of the whipped cream.
- Place the other two slices of bread (cream side down) on top of the strawberry-covered slices to form a sandwich.
- Gently press down on the sandwiches to help them stick together.
- Using a sharp knife, trim the crusts off each sandwich (optional).
- Cut each sandwich in half diagonally or into quarters.
- Garnish with mint leaves if desired.
- Arrange the sandwiches on a serving platter and enjoy!
Notes
- For the best flavor, use ripe strawberries.
- You can adjust the sweetness of the whipped cream by adding more or less powdered sugar.
- These sandwiches are best enjoyed fresh but can be stored in the refrigerator for a few hours.
