  • 8 slices of soft white bread (preferably shokupan or any fluffy bread)
  • 1 cup of fresh strawberries, hulled and sliced
  • 2 tablespoons of granulated sugar
  • 1 cup of heavy whipping cream
  • 2 tablespoons of powdered sugar
  • 1 teaspoon of vanilla extract
  • Optional: mint leaves for garnish

Instructions

  1. Wash the strawberries under cold water to remove any dirt or impurities.
  2. Gently pat them dry with a paper towel.
  3. Hull the strawberries using a paring knife or a strawberry huller, removing the green tops and white core.
  4. Slice the strawberries into thin rounds, about 1/4 inch thick.
  5. In a medium bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar and toss gently to coat.
  6. Let the strawberries sit for about 10-15 minutes to release their juices.
  7. In a large mixing bowl, pour in 1 cup of heavy whipping cream.
  8. Add 2 tablespoons of powdered sugar and 1 teaspoon of vanilla extract.
  9. Using an electric mixer or a whisk, whip the cream on medium speed until soft peaks form.
  10. Be careful not to over-whip; the cream should be fluffy and light.
  11. Lay out 4 slices of soft white bread on a clean surface.
  12. Spread a generous layer of whipped cream on each slice of bread.
  13. On two of the slices, layer the macerated strawberries on top of the whipped cream.
  14. Place the other two slices of bread (cream side down) on top of the strawberry-covered slices to form a sandwich.
  15. Gently press down on the sandwiches to help them stick together.
  16. Using a sharp knife, trim the crusts off each sandwich (optional).
  17. Cut each sandwich in half diagonally or into quarters.
  18. Garnish with mint leaves if desired.
  19. Arrange the sandwiches on a serving platter and enjoy!
