  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch

  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup vegetable oil (for frying)
  • 1/2 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 1 tablespoon ketchup
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Cooked rice (for serving)
  • Chopped green onions (for garnish)

Instructions

  1. Cut the chicken breasts into bite-sized pieces. In a large bowl, combine flour, cornstarch, salt, black pepper, and paprika. Toss the chicken pieces in the mixture until well coated.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken pieces in batches, frying for 4-5 minutes on each side until golden brown. Remove and drain on paper towels.
  3. In a bowl, whisk together sugar, apple cider vinegar, soy sauce, and ketchup. In the same skillet, sauté onion, bell peppers, garlic, and ginger for 3-4 minutes until tender. Pour in the sauce mixture and simmer for 2-3 minutes.
  4. Add the cornstarch mixed with water to the skillet, stirring continuously until the sauce thickens, about 1-2 minutes.
  5. Add the fried chicken back into the skillet, tossing to coat with the sauce and vegetables. Stir in the pineapple chunks and cook for another 2-3 minutes.
  6. Prepare rice according to package instructions. Serve the sweet and sour chicken over the rice, garnished with chopped green onions.
