- 4 slices of thick-cut bacon, chopped
- 1 medium onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 can (28 oz) crushed tomatoes
- 2 cups chicken or vegetable broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional, for heat)
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot or Dutch oven, place the chopped bacon over medium heat. Cook until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the fat in the pot.
- Add the diced onion to the pot and sauté for 3-4 minutes until translucent.
- Add minced garlic, diced carrot, and diced celery. Sauté for another 5 minutes until softened.
- Pour in the crushed tomatoes with their juices and stir to combine.
- Add the chicken or vegetable broth and stir well.
- Sprinkle in dried basil, oregano, and red pepper flakes (if using). Bring to a gentle simmer, then reduce heat and let simmer for 20-25 minutes.
- Blend the bisque using an immersion blender until smooth. If using a regular blender, transfer in batches carefully.
- Return to the pot (if using a regular blender) and stir in the heavy cream. Heat through for another 5 minutes.
- Season with salt and pepper to taste, keeping in mind the saltiness of the bacon.
- Stir the crispy bacon back into the bisque.
- Garnish with fresh basil leaves if desired and serve hot.
Notes
- For a spicier bisque, increase the amount of red pepper flakes.
- This bisque can be stored in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of broth or cream if needed.
