  • 4 slices of thick-cut bacon, chopped
  • 1 medium onion, diced
  • 2 cloves of garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 can (28 oz) crushed tomatoes
  • 2 cups chicken or vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, place the chopped bacon over medium heat. Cook until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside, leaving the fat in the pot.
  2. Add the diced onion to the pot and sauté for 3-4 minutes until translucent.
  3. Add minced garlic, diced carrot, and diced celery. Sauté for another 5 minutes until softened.
  4. Pour in the crushed tomatoes with their juices and stir to combine.
  5. Add the chicken or vegetable broth and stir well.
  6. Sprinkle in dried basil, oregano, and red pepper flakes (if using). Bring to a gentle simmer, then reduce heat and let simmer for 20-25 minutes.
  7. Blend the bisque using an immersion blender until smooth. If using a regular blender, transfer in batches carefully.
  8. Return to the pot (if using a regular blender) and stir in the heavy cream. Heat through for another 5 minutes.
  9. Season with salt and pepper to taste, keeping in mind the saltiness of the bacon.
  10. Stir the crispy bacon back into the bisque.
  11. Garnish with fresh basil leaves if desired and serve hot.

Notes

  • For a spicier bisque, increase the amount of red pepper flakes.
  • This bisque can be stored in the refrigerator for up to 3 days. Reheat gently on the stove, adding a splash of broth or cream if needed.
