  • 4 cups of seedless watermelon, cubed and frozen
  • 1 cup of coconut water (or regular water)
  • 2 tablespoons of fresh lime juice
  • 12 tablespoons of honey or agave syrup (optional)
  • Fresh mint leaves for garnish (optional)
  • Ice cubes (optional)

Instructions

  1. Select a ripe seedless watermelon, ensuring it feels heavy for its size and has a smooth, blemish-free skin.
  2. Cut the watermelon in half and scoop out the flesh, removing any seeds.
  3. Cut the flesh into 1-inch cubes and spread them in a single layer on a parchment-lined baking sheet.
  4. Freeze the watermelon cubes for at least 4 hours or overnight until completely frozen.
  5. After freezing, let the watermelon cubes sit for about 5 minutes to soften slightly.
  6. In a high-speed blender, combine the frozen watermelon cubes, coconut water (or regular water), fresh lime juice, and honey or agave syrup if desired.
  7. Blend on high speed until smooth and slushy, scraping down the sides as needed. If too thick, add more coconut water or regular water.
  8. For a thicker slushie, add a handful of ice cubes and blend again.
  9. Taste the slushie and adjust sweetness with more honey or agave syrup if needed. Blend again briefly to combine.
  10. For a more intense watermelon flavor, add a few more frozen watermelon cubes and blend again.
  11. Pour the slushie into glasses, filling them about three-quarters full. Use a spoon if necessary.
  12. Garnish with fresh mint leaves and, optionally, a slice of lime or watermelon on the rim of the glass.
  13. Serve immediately for the best icy texture. Leftovers can be stored in an airtight container in the freezer, but the texture may change upon thawing.

  • Feel free to experiment with different fruits like strawberries or mangoes for a unique twist.
  • For an adult version, add a splash of rum or vodka.
